Roaster’s Recommendation – October 2011

Panama Boquete – Casa Ruiz La Esperanza

City Plus Roast

An eccentric nose of cinnamon, stonefruit, and asparagus. It demonstrates an aggressive, yet desireable brightness from start to finish. A round and stable body pushes forward nuances of green pepper, allspice and more stonefruit. Exceptionally sweet whipped cream finish.

New offerings!

Sumatra Mandheling, Ujang Jaya – Dark Vienna Roast

A unique nose, comprising of blackberry, Pepsi, and Red Hot candies. A comforting and classic, cocoa-like mouthfeel complimented by a “blackened” (but not “burnt”) accent. Sweet, rich qualities develop until the cup gently rounds off to the tune of Devil’s Food cake.

Mountain H2O Process Decaf Mexico – Yeni Navan – Full City Roast

A delicate nose of white grape juice and tiramisu, translating later in the cup as chardonnay and Nilla Wafers. Brothy body with a rich maltiness, finishing dry and savory.

Mountain H2O Process Decaf Peru La Florida – Full City Roast

A deeply rich and layered brew, playfully bouncing between mesquite barbecue, malted barley, and macaroon. Smooth-bodied and hearty, finishing very sweet and slightly salty. All this featuring an aroma of lemon tart.

New Coffee!

Bali Kintamani Natural Process

Dark Vienna Roast

Playful nose of Shock Tarts, raspberry seeds, and angel food cake. An abrupt beginning — with a tart acidity and crisp, sour cranberry –that soon levels out into a fudgy and herbaceous base. Soft and voluptuous finish, blending tropical fruits with a refreshing earthiness.

Roaster’s Recommendation – September 2011

Brazil Sul De Minas

Vienna Roast

Aroma aplenty, including rum raisin ice cream, rhubarb, strawberry shortcake and sugarcane. A wholesome and round brew with depth, pronounced by Oreo cookie and oak accents dancing around a very slick body and unassuming acidity. Leaves a dough-like presense in the wake of a semi-sweet finish.

Flamenco Direct! Relationship Coffee – Palmira, Huehuetenango Guatemala – Palacios Family Farm

We are very thankful to have our relationship with Carlos Palacios and his family in Guatemala. They produce an amazing coffee and we are lucky to be their main green bean buyer/roaster. It truly is a win/win for all of us when we eliminate the middle men. We plan to visit them and the farm next year!

Brew-by-the-cup Flamenco Coffee (BBTC)

The emergence of brew-by-the-cup coffee has taken our industry by storm. You can’t help but see single cup coffee brewing at many cafes that used to only offer a drip-brew option. We believe that the increased understanding and popularity of Specialty grade coffee has helped push and promote this new style of coffee preperation and we think this will be a staple in most cafes that want to offer many single origin options without having to brew a full airpot everytime someone orders a certain coffee.

That being said, we believe that drip coffee is a staple that will always need to exist along side the new style of BBTC. Cafes will always have customers that want their coffee to take no longer than a few pumps from the airpot to their to-go cup and then they want to be on their way out the door.

Here is a great article/blogpost by Jack Groot on the subject – BBTC – fad or trend?

If BBTC coffee brewing is something that you want to add to your cafe there are many options to choose from. We stock and recommend the following options:

  • Flamenco Stand, 4-cup Manual Pour-Over Coffee Brewing Station – this device is a great way to provide pour-over single-cup coffee brewing without spending a ton of money on fancy equipment. Just think, you can brew four different cups of single origin coffee at the same time!
  • Bunn Trifecta - this machine really is amazing! With trifecta, the barista creates an experience which unlocks the nuances of your coffee. Using an air infusion single cup process, trifecta brews so that each coffee’s unique voice resonates.
  • Clever Single Cup Coffee Dripper – these have the advanced the concept of Full Immersion Coffee Brewing by creating an easy way to brew without bitterness, acidity or loose grounds. The difference is it’s new shut-off valve system. Instead of pushing the grounds to the bottom of the brew carafe, the grounds settle naturally.
  • Melitta Single Cup Brewer – this small device is portable and fits over any size mug or travel cup. The Melitta is wonderful because it gives you access to the important factors like water temperature, grind setting, even water distribution, and amount.
